Egg Fritatta

If you like eggs, try making an egg fritatta. It's an Italian omelet and you can put anything in it you want. I made one tonight. In my cast iron frying pan, I sauteed some onion, spinach leaves, asparagas, tomato slices, mushrooms, and fat free bologna in olive oil. I then added 12 eggs and scrambled everything together. When it was almost set, I added some low fat cheese and mixed it again. Then I finished it in the oven at 350 degrees for about 10 minutes until the sides were a little brown. Cut it into 6 pieces and serve hot. Lots of good protein and vegetables.

Food For Thought:

Just thinking about grazing the holiday party tables this year. It's really going to be difficult but I know I can keep in control. I have to keep thinking of my goal and using my plan to get there. I also have to allow a little fun too or else I just won't do it and I'll quit.
